Healthy and hearty, these strawberry bars require fresh fruit and grains- knocking out 2 food groups while tasting amazing!
Start off by buttering pan an 8 by 8 pan and preheating oven to 325. In a large bowl combine 4 cups of chopped strawberries (fresh) and 2/3 cup white sugar. Mix thoroughly. Let sit 10 minutes.
While the filling is sitting, start on the crust- adding dry ingredients first. Mix together 2 cups oats, 1/2 cup whole wheat flour, 1 tablespoon cinnamon, 2 tsp salt, 1/3 cup brown sugar, and 1/3 cup white sugar.
Mix in 1 tsp vanilla and 1 cup melted butter.
Now back to the filling- add in about 1 tablespoon of lemon juice and 1/3 cup cornstarch. Mix.
Be sure your 8 by 8 pan is buttered and press in 2/3 of your crust mixture. Once pressed, add filling to top. Finish with sprinkling the leftover topping on top. Bake for 35-40 minutes until golden brown. Let cool, cut, and serve!
